OUR PROCESSING METHODS

The Art of Coffee Processing

There are 3 predominant ways coffee has been traditionally processed: Washed, Natural plus Honey and we handle all these major types of processing in our facility. Essentially, the tasting notes of the coffee can vary significantly depending on the type of processing it undergoes.


Washed

Washed coffees are all about the beans because they depend mostly on how much natural sugar and nutrients they have absorbed during the growing cycle. Washed process highlights the true character of single origin beans like ours, and that’s why so many speciality coffees are processed this way.

Honey

Yep, you’ve guessed it, it’s like someone added a dollop of fresh honey and caramelized chocolate in your morning cuppa, without the calories. Although the name honey-processed actually comes from how sticky the beans can be during processing and not from their sweet rich flavour. The cherry peel of the coffee is removed, but part of the fleshy inside, or the mucilage, is left on the beans when they dry, which means they are often left rounded in sweetness with a complex mouthfeel.

Tepat sejak tahun 1985, saat kami, keluarga Sudana mulai merintis Bali Beans, kami rajin mengumpulkan kotoran Luwak dari kebun. Namun, kami melakukannya bukan untuk menghasilkan keuntungan, melainkan sebagai wujud terima kasih kami terhadap 'hadiah' yang diberikan alam. Kami memprosesnya dengan tekun, semata-mata agar para tamu dapat menikmati Kopi Luwak setiap ada pertemuan dan pernikahan adat Bali.

Bagi Ayu Sudana kecil, sebagai Mitra Pengelola Bali Beans, ini adalah petualangan di mana Ia berjalan pagi-pagi menjelajahi perkebunan keluarga, mencari dan menemukan kotoran segar Luwak di bawah pohon dan mengumpulkannya sebagai imbalan uang saku dari orang tuanya.

Saat ini, reputasi Kopi Luwak telah ternoda karena beberapa petani yang terlibat dalam praktik kejam menggunakan Luwak penangkapan untuk produksi kopi. Kami, Bali Beans, hingga kini masih mencari kotoran liar Luwak di bawah pohon setiap pagi. Kami mengumpulkannya dengan tangan selagi masih segar, mirip dengan cara yang dulu dilakukan Ayu Sudana kecil, dan kami memprosesnya dalam jumlah minor. 

Dengan menjaga agar Luwak tetap benar-benar liar dan bebas dari sangkar saat mereka berkeliaran di perkebunan kami, kami berkontribusi pada mata pencaharian berkelanjutan bagi para petani kami. Sesuai dengan visi kami, kami dapat memberikan produk unggulan kepada petani kecil kami, yang membantu melestarikan warisan tradisional kami, habitat hutan alami di wilayah Kintamani, sambil tetap menghadirkan kepada Anda Kopi Luwak liar premium untuk Anda nikmati.
